When coconut yogurt separates, you might notice a watery layer on top and a thicker layer at the bottom.
Temperature Fluctuations: Temperature changes during storage or transportation can also contribute to separation. Coconut yogurt is sensitive to temperature variations, and if it goes through a series of temperature fluctuations, the fats and liquids may separate more easily.

Simply stir it up once open to get a nice consistency. If you prefer a thicker texture, you can achieve this by refrigerating the yogurt for a few days before opening. If the yogurt becomes too thick for your liking, you can add coconut water or plant milk to thin it out. Proper temperature control is crucial for maintaining a creamy consistency. Extremely cold temperatures, below 2 degrees, can cause the coconut cream's fatty acids to freeze and significantly thicken the yogurt, almost becoming hard. To prevent this, avoid placing the yogurt right at the back of the fridge.
