Gluten Free Banana Bread
INGREDIENTS
2 ripe bananas, mashed
1 cup cassava flour
1/2 cup Simpla coconut yogurt
1/4 cup coconut oil, melted
1/2 cup maple syrup
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chocolate chips
STEPS
Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line it with parchment paper.
In a large mixing bowl, combine the mashed bananas, coconut yogurt, melted coconut oil, and maple syrup/honey. Mix well until everything is thoroughly combined.
Sift in the cassava flour, baking powder, baking soda, and salt to the wet ingredients. Stir until just combined, being careful not to overmix. If you're adding nuts, chocolate chips, or any other add-ins, fold them in now.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let it cool in the pan for about 10 minutes, then turn out onto a wire rack to cool completely.

INGREDIENTS
1 cup Simpla lemon coconut yogurt
1/2 lemon (squeezed)
1 cucumber
1 handful of dill
1 teaspoon olive oil
Pinch of Salt
STEPS
Shred and strain the cucumber
Thinly dice the dill
Add everything together in a bowl and mix thoroughly
